- Description: LARD - only pure refined quality lard preserves its firm white character if exposed to prolonged heat. Inferior qualities become yellow in color. Lard in casks may be subject to loss in weight due to absorption of some fat by the containers. Unless air is excluded, even pure white lard will undergo flavor spoilage (rancidity).
