Hygroscopic and subject to a natural loss in weight. The extent of loss in weight is largely dependent upon the moisture content of the egg yolk at the time of packing. If the moisture content is unusually high, a considerable volume may be lost through natural evaporation through the staves of the barrels in which it is packed. On the contrary, if the moisture content is low, the yolk may absorb moisture from the staves of the barrel and so cause shrinkage of the staves which may result in leakage.
