- milk used (e.g. cow's, sheep's, goat's milk etc.)
- water content of the non-fat cheese solids
- curdling method
- fat content of the solids
A small number of standard cheese varieties is listed below:
- Hard cheese: Emmental, Cheddar
- Soft cheese: Limburger, Brie, Camembert
- Slicing cheese: Gouda, Tilsit, Edam
- Semisoft slicing cheese: Butterkase (a rich creamy cheese)
- Curd cheese: Quark, layered Quark
- Sour milk cheese: hand-formed curd cheese, Harz Mountain cheese
